Since this vegetable can be grown in #cold regions but are very much #handy and #easy to grown even #indoors. We are talking about #Indian #Turai or #Tori or #Ridge #Gourd, it belongs to the #cucumber family and are high in #fibers, #vitamins and #iron. Easy to #digest and has many #antiinflammatory, #antibacterial and #antioxidant properties. It helps in controlling #diabetes, reducing body #heat and aids in #weight loss.

Ingredients
500 gms : Turai / tori / ridge gourd
2 Cup : Potatoes
1 Cup : Tomatoes
1 Tea spoon : Jeera / cumin seeds
½ Tea spoon : Heeng / asafetida
1 Tea spoon : Kasuri methi / fenugreek leaves
2 Tea spoon : Turmeric powder
2 Tea spoon : Coriander powder
1 Tea spoon : Garam masala
2 Table spoon : Mustard oil
½ Cup : Water
Table salt to taste
Instructions
Take pressure cooker on medium flame, add mustard oil
Add jeera / cumin seeds, heeng / asafetida, kasuri methi / fenugreek leaves and let them crackle
Add tomatoes, turmeric powder, coriander powder, garam masala
Add table salt and sauté till oil separates
Add potatoes and sauté for 2 mins
Add peeled and chopped turai / tori / ridge gourd and close the lid of the pressure cooker
Open the lid after 5-6 whistle
Ready to serve
*#Tip:
Can garnish with coriander leaves
Chilly powder or chilly flakes are optional
**#Serve with chapatti, roti, fried rice, paratha, poori, rice
