A #vegetable grown in #India and #America. It belongs to the #cucumber family and are high in #fibers, #vitamins, #lipids, #magnesium and #iron. Easy to #digest and has many #antiinflammatory, #antibacterial and #antioxidant properties. It helps in controlling #diabetes, #migraine, reducing body #heat and #cholesterol and aids in #weight loss.

This recipe would be very #nutritious and no doubt will keep you #fit and #healthy and in great #shape. So let’s get started!

  • Preparation time 10 mins

  • Cooking time 30 mins

  • Servings 6

Ingredients

  • 500 gms : Turai / tori / ridge gourd

  • 1 Cup : Potatoes

  • 1 Cup : Tomatoes

  • 1 Tea spoon : Jeera / cumin seeds

  • ½ Tea spoon : Heeng / asafetida

  • 1 Tea spoon : Kasuri methi / fenugreek leaves

  • 2 Tea spoon : Turmeric powder

  • 2 Tea spoon : Coriander powder

  • 1 Tea spoon : Garam masala

  • 2 Table spoon : Mustard oil

  • ½ Cup : Water

  • Table salt to taste

Instructions

  1. Take pressure cooker on medium flame, add mustard oil

  2. Add jeera / cumin seeds, heeng / asafetida, kasuri methi / fenugreek leaves and let them crackle

  3. Add tomatoes, turmeric powder, coriander powder, garam masala

  4. Add table salt and sauté till oil separates

  5. Add potatoes and sauté for 2 mins

  6. Add peeled and chopped tori / sponge gourd, water and close the lid of the pressure cooker

  7. Open the lid after 5-6 whistle

  8. Ready to serve

*#Tip:

  1. Can garnish with coriander leaves

  2. Chilly powder or chilly flakes are optional

**#Serve with chapatti, roti, fried rice, paratha, poori, rice
