Tomato Rice | Spanish Rice | Red Rice | Arroz Rojo | Mexican-Indian Recipe

Do you like #Mexicanfood? If yes, we are here today with one of your #favorite dish. Some call it #SpanishRice, #RedRice, #ArrozRojo or #TomatoRice. It’s a very #healthy and #nutritious dish which is liked by all age groups. Ideal for #lunch time and best part that you might not need to make other dish to fulfill it. It’s a complete package on its own.

#Tomatoes basically contains 95% #water with little amount of #carbohydrates and very minute percentage of #fats and #proteins. Here we have changed it a little bit, mixing #Indian and #Mexican #cooking. So let’s get started and see how it turns out.


  • Preparation time 10 mins

  • Cooking time 20 mins

  • Servings 2



Ingredients

  • 1 Cup : White rice

  • 2 Table spoon : Ghee / clarified butter

  • 1 Tea spoon : Jeera / cumin seeds

  • 250 gms : Tomatoes

  • 100 gms : Onion

  • 4 medium : Garlic cloves

  • 2 Cup : Water

  • Table salt to taste

Instructions

  1. Take pressure cooker on medium flame, add ghee / clarified butter

  2. Add jeera / cumin seeds and let it crackle

  3. Add onion and fry till golden brown

  4. Add garlic cloves by crushing them

  5. Add white rice and sauté till golden brown

  6. Add tomatoes followed by table salt

  7. Add water and cover the pressure cooker with its lid

  8. Cook for 15-20 minutes

  9. Ready to serve



**#Tip :


  • Instead of tomatoes as whole can even use tomato sauce


  • For non-veg food lovers instead of water can use chicken broth


  • Chilly powder or chilly flakes are optional
