Today we start by sharing some #facts. Do you know #Brinjal or #eggplant is not a #vegetable but a #fruit? No no don’t hold your #surprise face because this does not stop here we are about to tell you that it is related to #tomato and #potatoes. Surprise! But true it comes from a species of #nightshade which delivers an #edible fruit which being related to #genus #Solanum, has its similarity to #tomato and #potatoes.

Ingredients
250 gms : Brinjal / eggplant
4 Table spoon : Mustard oil
1 Tea spoon : Jeera / cumin seeds
1 Tea spoon : Kasuri methi / fenugreek leaves
1 Tea spoon : Turmeric powder
1 Tea spoon : Coriander powder
1 Tea spoon : Garam masala
½ Tea spoon : Chat masala
100 gms : Tomatoes
200 gms : Potatoes
Table salt to taste
Instructions
Take kadhai on medium flame, add mustard oil
Add jeera / cumin seeds, kasuri methi / fenugreek leaves and let them crackle
Add tomatoes, turmeric powder, coriander powder, garam masala
Add table salt and sauté till oil separates
Add potatoes and cook for 2 minutes
Add brinjal / eggplant, mix well and cover with lid
After 15 minutes open lid and add chat masala and mix well
Ready to serve
*#Tip:
Can use fried potatoes directly
Chilly powder or chilly flakes are optional
**#Serve with chapatti, roti, poori
