#Pumpkins have been in history of #Mesoamerica where it was #domesticated as a food item. Now grown at various places on earth with lots of #variety. They have been rich in #beta carotene, #iron, #vitamins, #potassium, #calcium and #folic acid. One interesting and unique features of pumpkin is that they #taste different in different states and can be used from its #unripe form (#green) to its very #ripened form (#yellow).
So let’s get started and make a #tangy, #spicy and #mouthwatering dish with #Indian #flavors.

Ingredients
500 gms : Kadhu / green pumpkin
1 Tea spoon : Methi seeds / fenugreek
1 Table spoon : Green chilly
1 Tea spoon : Turmeric powder
1 Tea spoon : Coriander powder
1 Tea spoon : Garam masala
2 Table spoon : Mustard oil
Table salt to taste
Instructions
Take kadhai on medium flame, add mustard oil
Add methi seeds / fenugreek, chopped green chilly and let them crackle
Add turmeric powder, coriander powder, garam masala
Sauté for 2 minutes
Add chopped kadhu / green pumpkin and sauté
Add table salt and cover with a lid and turn to low flame
Open the lid after every 10 minutes 2-3 times and sauté
Ready to serve
*#Tip: Extra chilly powder or chilly flakes are optional
**#Serve with chapatti, roti, poori, paratha
