Baigan Bharta | Mashed Eggplant Recipe | Punjabi Dhaba Style | Smoky StirFry Eggplant | Brinjal Dish


A dish that has its origin in #Punjab, #India, is also a popular #cuisines in #Bangladesh and #Pakistan. It is generally prepared using 3 ingredient – #eggplant, #onion and #tomatoes. But people like us who keep #experimenting and by giving their own #twist serve a new #variety of it. But what are you doing, siting on that couch? Get up and let’s get started with this #mouthwatering recipe!

Ingredients

  • 2 Medium size : Baigan / eggplant

  • 1 Cup : Onions

  • 1 Cup : Tomatoes

  • 1 Tea spoon : Methi seeds / fenugreek

  • 1 Tea spoon : Turmeric powder

  • 1 Tea spoon : Coriander powder

  • ½ Cup : Coriander leaves

  • 2-3 Whole : Green chili

  • 2 Table spoon : Mustard oil

  • Table salt to taste

Instructions

  1. Wash baigan / eggplant with water and pat dry

  2. Apply some oil all over the surface of baigan / eggplant

  3. Keep it for roasting over an open flame

  4. Keep on turning baigan / eggplant after 3-4 minutes over the flame for evenly cooking

  5. Check for perfect roasting with a knife which should easily slide into it without any resistance

  6. After roasting place them on a plate and let it cool

  7. Peel the skin of roasted and smoky baigan / eggplant

  8. Chop the roasted baigan / eggplant and mash it

  9. Take a kadhai on medium flame, add mustard oil

  10. Add methi seeds / fenugreek and chopped green chili

  11. Add onion and tomatoes and sauté for 2-3 minutes

  12. Add turmeric powder, coriander powder, table salt and cook till oil separates

  13. Add mashed baigan / eggplant and cook for 5 minutes

  14. Garnish with finely chopped coriander leaves and green chili

  15. Serve on a plate

*#Tip:

  1. Don’t wash baigan / eggplant after roasting, to utilize its own oil which comes out after heating

  2. It would be perfect if some roasted flakes of baigan / eggplant are left, it only adds more smoky taste to it

  3. Can take out the seeds part if you don't like it

  4. Chili powder or chili flakes are optional

**#Serve with roti, paratha, puri and even litti
