ARSA | Garhwali Sweet | Pahari Recepie

What's better than to start with a sweet note? Taking you to the north side of India in the hills of #garhwal where special occasions like weddings and traditional celebrations with dhol and musk baja sound and guests dancing and enjoying a hot cup of tea with a sweet #Pahari delicacy.

#Arsa is one of the most favorite dessert of the people in #Uttarakhand. It is an ideal snack for kitty parties, picnic, road trips and birthday parties, making you fall in love with its mouth-watering taste.


Arsa

  • Preparation time 10mins

  • Cooking time 30mins

  • Servings 10

Ingredients

  • Rice 500 gm

  • Gur / Jaggery / Brown Sugar 350 gm

  • Mustard oil to deep fry 750 ml

  • Water As per requirement

Instructions

  1. Soak the rice in a bowl full of water for at least 4 hours.

  2. Drain out the water and transfer the rice in a muslin cloth after 4 hrs

  3. Let the rice dry up.

  4. Grind rice to form a smooth powder. (Traditionally this step is done using silbata but you can use grinder)

  5. Keep a pan on medium flame, add water and jaggery to the pan.

  6. Boil to form thick syrup.

  7. Mix rice with the jaggery syrup and prepare dough.

  8. Roll out small balls from the dough in the shape of doughnuts.

  9. Heat oil in a kadhai on medium flame

  10. Deep fry the rolls one at a time till they turn golden brown.

  11. Serve on a plate.
